Blackberry Fizz
A Wonderful Summer Mocktail!

I was sitting at home this past weekend with my cats and had an absolute craving for some blackberries. I had seen them at the grocery store the week prior and they just looked so good! With the sun shining and birds chirping (I leave birds on my TV for my cats to be entertained by) I ran to the HEB and gathered my supplies. You can see the full recipe down at the bottom of this post, and trust me, you’re going to want to try this one. The nice thing about this drink too is that the blackberries aren’t too sweet of a fruit so you can really control the level of sweetness with the amount of honey you use. For me, 2 tablespoons was perfect. I saved a little bit to drizzle on top and the really elevated the drink for me. You can use a simple syrup in the recipe as well if you’d like, but with summer coming up, getting some local honey is a great way to help with your allergies, help save the bees, and help a local bee keeper. RECIPE: SERVES 1
INGREDIENTS
½ cup blackberries
2 TBSP local raw honey (optional: save a little to drizzle on top at the end)
About 5 mint leaves
½ lemon juiced
¼ cup water
Top with seltzer (I like Top Chico)
EQUIPMENT REQUIRED
Muddle or blender
Strainer (optional)
INSTRUCTIONS
Muddle or blend the blackberries, mint, lemon juice, honey (save some to drizzle on at the end), and water.
Pour the mixture into a glass over ice, I like to strain it just to get the big pieces of blackberry and mint out along with the seeds but this is not necessary.
Top with your seltzer water of choice. Being in Texas, Top Chico is the only way to go.
I like to garnish the drink with some blackberries on a toothpick and a sprig of mint. Be sure to smack the mint first to get the essential oils going. I also like to use the remaining honey to drizzle on top at the end.
